Official screenshots already show plenty of wildlife: a wild cat and deer at a stream in Mount Kalaga National Park, an iguana in the Leonida Keys and alligators in Grassrivers.
Where the zoo is and how many species there are is unknown. Animals will get their own section of the database after release.

Hunting is in GTA 6: Rockstar promises prime hunting in Mount Kalaga National Park, it appears in the Extended Look, and TGG reports it earns money.
A national park against Leonida’s northern border with prime hunting, fishing and off-road trails. Its backwoods are home to hillbilly mystics and paranoid radicals.
Leonida’s swampland, the game’s version of the Everglades. Alligators are its best-known residents, but Rockstar warns of deadlier predators among the mangroves.
