An airboat is the way around Grassrivers, where the water is too shallow for a propeller. Official screenshots show them racing across the marsh, one of them with a police boat and a helicopter behind it.
Game Informer’s issue 382 lists air boating among the activities of Leonida, alongside jet skiing, scuba diving and kayaking. How you get one, and whether it can be bought, Rockstar hasn’t said.

Leonida’s swampland, the game’s version of the Everglades. Alligators are its best-known residents, but Rockstar warns of deadlier predators among the mangroves.
Fishing is in GTA 6: it appears in the Extended Look and on an official screenshot, and Rockstar names Mount Kalaga and Gambit Bay as places to fish.
Leonida holds more than 170 animal species on land, in the air and at sea. Some are marked Rare, Discoverable or Legendary and can be tracked; at the zoo or in the wild each new species is ticked off a list.
